My name is Kelsey, not Roofresh, but Roo IS my nickname. I live in the Phoenix area with my husband and we are having fun being newlyweds and going on crazy adventures together. We like finding new hangouts, food, art, music and friends; so that's pretty much what my blog is about. You'll find a bit of fashion, design, nutrition and family sprinkled throughout my content, or anything else that catches my eye at the moment. My blog has changed a lot over the last year, but you'll see that it's really just a record of our lives together; our public journal.

It's Been a While

Jim and I have been SUPER busy the last month. I mentioned it before, but Jim was in a high stakes weight loss competition which ended a couple of weeks ago and he came in 3rd place out of 54 people! He lost 37 pounds and I'm so proud of the method he used. I have to admit that we let ourselves get out of hand with our eating over the summer, and with our kitchen being remodeled, eating out was sometimes easier than cooking-in. So for six weeks we ate a pretty consistent diet (or as I like to say 'lifestyle modification') of mostly plant-based, whole food, healthy meals, and exercised 4-5 times a week. We kind of went easy on things this last week or two because we plan on starting a more rigorous vegetarian diet that won't completely exclude meat, but include it sparingly.

*Disclaimer-I have a nutrition degree in Dietetics, therefore I'm constantly refining the foods that we eat and trying new methods of trying to be healthy. We do usually follow what I like to call the '80/20' rule, however, and 20% of the time we allow ourselves to have a little splurge.

As our splurge after our hard-core, six-week competition (which I tried to adhere to even though I wasn't in the competition), we celebrated Jim's victory by partaking in the Phoenix Food Truck Festival. It was SO FUN! It was the first year that the festival took place and it was a huge success! We got to try samples from tons of different trucks, and wash it down with some Four Peaks brews. It was a great way to support local business as well...I think I was in food heaven!

1. Friday night (our splurge night) we started out the weekend by going to Arrogant Butcher, which pleasantly surprised me. We had great food and great service!

2. After dinner we saw the most amazing band in the world at the new Crescent Ballroom in Phoenix. (I apologize for the horrible camera phone quality, but you get the idea.) We've actually seen Sergio Mendoza Y La Orkesta three times now, and obviously they keep bringing us back. I don't think I've ever had so much fun at a concert; if you get the chance to see them, do. (Ps. Dude playing the Maracas was AWESOME..he made amazing percussive noises with his mouth, feet, you name it!)

3. Got tattooed. 

4. The lovely Mrs. Jacqueline Hong accompanied us to the Phoenix Food Truck Festival.

5. The whole gang (including my skinny hubby) out at the festival.

6. Oh, and bangs happened a couple of days ago. (Blurry)

We didn't get great shots of the actual food or trucks at the festival, ha ha, we got there a little late and between trying to organize which lines to stand in and get iPhones out, not many photos were taken. Just another reason to go next year! Overall this weekend was a blast! I had so much fun and I still have so much more to share with you all. For now I'm peacing-out, but I will hopefully have a little more time this weekend for some house updates!

So Long..Farewell..Auf Wiedersehen WIC

So if you follow me on twitter you may have seen me talking about my 'second to last day'. For those of you who don't know I have been working for WIC for the last 14 months. WIC stands for Women Infants and Children, and it's a supplemental food program geared towards nutrition and breastfeeding counseling. It's funded by the state and if you live in the US, most likely your state has a WIC program. 

I've learned a lot at my time at WIC, like that people forget that milk is not a meal replacement for their kids, juice is just as good as eating fruit (as long as it's 100%), and Flaming Hot Cheetos are a staple for any good diet. I kid I kid. I really have learned a lot and the knowledge I've gained regarding child development, breastfeeding, and a child's will are invaluable tools for my life.

I will say that while I will not miss stubborn 3-year-olds refusing to let me check their height and weight (seriously, all you have to do is stand there...it's the worst part of your day..standing), I will totally miss the staff and especially the girls at the Tempe clinic. It's a rarity that so many females in such a small work environment not only get along so well, but that there is legitimate bonding present. I will miss hearing the stories of their weekend activities, their families and new exciting chapters in their lives. 

With that said, I am on to a new and exciting chapter in mine! I recently got offered another job with the state! I will be working for the Arizona Department of Education, in the Health and Nutrition department. I'm officially going to be an 'Education Program Specialist' or in simpler terms, I'm going to audit the National School Lunch Program. It kind of sounds...vague, I know, but basically I'll be going to schools all over Arizona and making sure that they are complying with all of the necessary regulations and dietary guidelines to participate in the School Lunch Program.

I'm excited for the opportunity to have some variety, see some new places and meet some new people. Woo hoo! 

So with that, tomorrow I will be saying goodbye to my friends at WIC, and I will truly miss them. Here are some pictures of the Tempe girls hanging out last week at a little farewell dinner. We had some trouble getting the picture going, and as you can tell from the progression of the photos, our smiles got less and less sincere as the process went on....

Hello Valentine!

Jim Bob and I were at the grocery store a couple of weeks ago and passed the Valentine's Day section and my heart froze when I saw the Hello Kitty invites. I'm not a huge Hello Kitty fan or anything, but it just made me think of being a little girl hand writing out all of my Valentine's Day cards for school. Well of course we had to pick up candy heart suckers to go along with them! So I had a great time writing them all out feeling like I was a little girl again, doing something....just for fun and the sake of doing it!
If you're one of our friends and haven't gotten one yet, don't worry, it's probably just because we haven't had a chance to see you yet to give it to you in person. Unfortunately, we only got them for people who live in our state, not for out-of-towners like my friend Fancy Biscuit, she's a saint! 

I got a little bored, so don't make fun of me, (but I really love Instagram) and I made a little collage out of the leftover void-sticker space that came with them.
WHAT?!?! I really wanted you to have a good Valentine's Day! I don't care what you say, I know this collage made you feel all Valentiney today. :)
