My name is Kelsey, not Roofresh, but Roo IS my nickname. I live in the Phoenix area with my husband and we are having fun being newlyweds and going on crazy adventures together. We like finding new hangouts, food, art, music and friends; so that's pretty much what my blog is about. You'll find a bit of fashion, design, nutrition and family sprinkled throughout my content, or anything else that catches my eye at the moment. My blog has changed a lot over the last year, but you'll see that it's really just a record of our lives together; our public journal.

Fashion Cambio {San Diego Weather}

I'm so excited to start doing Fashion Cambio posts again. Reminder: cambio means change and this is my way of showing inspiration and how I change it to fit my closet. I was so excited when we went to San Diego last month because I could actually wear a sweater! It really isn't possible, not even at night, to wear anything but shorts in Phoenix until about late October. Wearing a sweater IN JULY was a real treat!

The Quest for Pliny Wrapped Up

If you've been keeping up with my last few blog posts you would know that Jim and I have been in San Diego eating, touring, getting towed and basically getting taken advantage of financially. Despite the latter we have had fun. We were on the hunt for the Brewer's Association's number one rated beer, Russian River's Pliny the Elder but had no luck. We must have visited fourteen liquor stores and eight or so bars and did not lay eyes on any Russian River brews in San Diego or LA.

I know how anticlimactic this is, but we still found a lot of San Diego specific beers and had fun sampling. We spent a lot of time with our friends Joe and Wendy Marsh, walked around the Gaslamp District, saw Harry Potter and went to a Mat McHugh show at Belly Up Tavern. Overall, good trip.

The Quest for Pliny the Elder

So recently I sent Jim a Huffington Post article on the top 50 beers in the world. He of course saw the number one beer and HAD to try it. The problem is, the number one beer on the list is Pliny the Elder, made by Russian River in Santa Rosa, CA and it's not distributed in Arizona. To give you a little background on my husband, he doesn't like beer but if we're in a brewery he'll drink it. He doesn't like wine but if we're at a winery he'll drink it. We make a special trip to the Ghiradelli store when we're in California because it's the best, and we're near it. Of course when he found out that Pliny the Elder is only distributed to a handful of states, we went to California to get it (that's only half true, we were already going to see a concert, but it sounded more dramatic that way).

Now just because we are in a state that distributes Russian River, doesn't mean that it's on every street corner. We already checked out a BevMo here with no luck. We will be staying in San Diego but are currently driving to LA for the day. We're hoping to get lucky (and probably disappointed due to all of the build up) but we are excited either way.

Since we have no photos of the hard to find brew yet, I'll leave you with some pictures of Lucha Libre Taco Shop, the small shop where we ate dinner last night. It's pretty sick (as in good).

Hair History

So again you might have noticed that I changed a lot on my blog. I've been annoyed lately because every time I would look at my page it has looked so cluttered! Ahhhh, I feel much better now, but I'm still looking for things to nix in order to clean up. :) Anyway, while looking through old pictures on my computer to change my look, I was reminded of all of the times I changed my hair color-I guess my blog was not the only thing I got antsy with! I thought that it was a little comical so I decided to share some of the transition pictures from brunette to blonde.

I figured that my hair was looking too dark, plus I had to dye my roots every few weeks to cover up my blonde the was growing in so I added some highlights...

A RooFresh Wedding,The Engagement

I love wedding planning; it's so fun to have an event just for you and your mister to pick out all of the prettiest, quirkiest things that reflect you as a couple. I loved looking for little details to show our guests our sense of style and put a little bit of our personality on display. Since the wedding, I've continued to interact with our vendors and see them pop up in fun places.With all of that said I will be adding a RooFresh Wedding page to my tabs above.  I'd like to take this space to recognize them as well as go behind the scenes of our big day to share all of the nostalgic details.  Over time I will update the RooFresh Wedding page and add layers to it, and by all means feel free to ask questions!

The Engagement

First things first for weddings; you've gotta get engaged! Jim proposed to me June 5, 2009 in San Diego on a pier in Point Loma and the rest of the weekend was AWESOME! We were there for a friend's wedding and all I can say is that it was the best trip of my life. We went to the San Diego Zoo, Seaworld, the beach and the Gaslamp district. 

Here is my OG engagement ring, a solitary diamond (it has since changed and grown :).

Last but not least, the pier where Jim proposed.
Something that got started during this trip was the clown nose prop. We were walking around a mall in the Gaslamp and went into a little toy store. Jim saw these red noses and after that we decided to take every picture twice; once "normal" and once with the clown noses!

Just a few examples. :)

Believe it or not, this tradition stuck through our engagement pictures and all the way up until the wedding!

Sin Queso

I think that the worst thing ever in the world happened this week: I agreed to not eat cheese for a month! Why in the world would I even consider something so crazy you ask? Well it started when my husband and I were out to lunch on Sunday and we started talking about the foods that we eat a lot of. He said that my three favorite things to eat/drink are "coffee, cheese and little pieces of chocolate," (from Trader Joe's). I have to admit he's pretty right on. After discussing this he went on to talk about how bad he heard cheese is for you, and how he read this article in Men's Health about how horrible it is for you...
Now as some of you might know, I do have a BS in Nutrition (Dietetics) and you would think that I know how bad cheese can be for you...well I do, I just choose to eat it in moderation, er uh, well I guess if I still ate it in moderation it wouldn't be that bad. It wouldn't be bad if I ate it in moderation and if I ate low-fat cheeses. It wouldn't be bad if I ate it only a couple of times a week, not every day. I guess what I'm trying to say is that I have let myself get slightly out of control with the cheese and I could eat a whole block of cheddar in one sitting.
With this new realization out on my plate in front of me I had to take a step back and think about how far away from moderation I have gotten and how I was going to rein it in. Well Jim Bob wanted to cut back or stop using it in cooking for a while, I decided to take a leap and say that as soon as we finished up what I have stock-piled in our fridge that I would take a one month hiatus from my love-affair with cheese and see how I feel; then I could gradually re-introduce cheese but in a healthier way.
...But I looooove cheese: cheddar, gouda, muenster, goat cheese, mascarpone, cream cheese, and feta! With all of that said, I must share something that we (Jim Bob, my sister and I) discovered on a recent trip to San Diego. The most glorious, wonderful, and delicious discovery in the world. Venissimo cheese store in the Gas Lamp district is by far my favorite store in the world, even surpassing clothing stores, shoe stores and etsy stores. My sister and I were giddy as we walked into this cheese haven and were even more ecstatic after we found out that they hand out free samples like nobody's business. I will say that if you have never been to San Diego you should go for the ocean, the weather, the restaurants but mostly for this store.
So you can see how much I am going to miss cheese this month. Is there anyone else out there that feels the same way about cheese that I do? Or is your passion for a different food? Share!
